I don’t know how this recipe has not been posted yet. I make homemade guacamole ALL the time! I only started eating guacamole last year. I used to have a thing about avocados…. I don’t know why, but I am surely glad it’s been resolved. Dan loves guacamole and used to always get mine when we would eat Mexican food, but not anymore.

Chloe is a milk drinker… like a crazy milk drinker. She loves her milk. On Sunday, she wanted something different to drink. Her beverage selection is very limited though. She has never had a soda, doesn’t really like juice, and she’s had enough hot chocolate this winter.

Today is the day to get out all your Dr. Seuss books and have a “read-a-thon!” Some of the first books Chloe got when she was a baby were Dr. Seuss books. I am so excited to share this roasted red pepper soup recipe with you today. I was watching Top Chef a few weeks ago and one of the contestants made a roasted red pepper soup. I eat roasted red peppers at least two or three times a week, but never thought of making a soup with them. After seeing that episode, I could not get the soup out of my mind. I seriously do think about food 24/7.
